The Commis 1 – Pastry is responsible for assisting in the preparation and presentation of high-quality pastries, desserts, and baked goods in accordance with the standards set by the resort's pastry kitchen. This role supports the Pastry Chef and Demi Chef de Partie in daily operations, ensuring all items are prepared on time, meet quality expectations, and follow hygiene and safety standards. The Commis 1 contributes to the creativity and smooth execution of the pastry section while maintaining a clean and organized work environment.
Key Responsibilities:
Pastry Preparation:
- Assist in the production of pastries, cakes, breads, and desserts as per the menu and chef's instructions.
- Follow standard recipes and portion control guidelines to ensure consistency and quality.
Daily Operations Support:
- Set up the pastry station with required tools, ingredients, and mise en place before service.
- Work efficiently during service to ensure timely preparation and presentation of items.
Food Quality & Presentation:
- Maintain high standards of taste, texture, and visual appeal in all pastry items.
- Ensure correct portion sizes and garnishing techniques are used.
Food Safety & Hygiene:
- Follow all food safety and hygiene regulations in handling, storage, and preparation of food.
- Keep the workstation clean, sanitized, and organized at all times.
Inventory & Stock Control:
- Assist in receiving and storing pastry ingredients and supplies.
- Monitor stock levels of pastry ingredients and report shortages or spoilage to supervisors.
Teamwork & Communication:
- Collaborate closely with the pastry team and other kitchen sections to ensure smooth operations.
- Follow instructions from the Pastry Chef or senior chefs and actively participate in briefings and training sessions.
Creative Contribution:
- Suggest ideas for new pastry items or improvements to existing ones when appropriate.
- Stay updated with pastry trends and techniques as guided by senior chefs.
Equipment Care:
- Use pastry tools and equipment safely and correctly.
- Report any malfunctions or maintenance issues promptly.
