    Job Summary:

    The Head Baker (Bread) is a highly skilled and passionate professional responsible for leading bakery operations with a strong focus on bread production for Italianni's This role oversees daily baking activities, ensures consistent product quality, develops and standardizes recipes, manages and mentors a team of bakers, and upholds food safety and operational standards. The position requires deep expertise in both artisan and commercial bread baking, strong leadership capabilities, and a commitment to excellence in craftsmanship.

    Key Responsibilities:

    • Lead and supervise daily production of Italian breads, ensuring consistent quality, texture, flavor, and presentation.
    • Ensure all breads align with Italianni's brand standards and authentic Italian culinary identity.
    • Develop, test, and standardize recipes for house breads, seasonal offerings, and specialty items.
    • Plan and forecast production based on restaurant volume and sales trends.
    • Maintain freshness standards and proper proofing, fermentation, and baking techniques.
    • Train, mentor, and evaluate bakery staff to maintain high performance and skill development.
    • Ensure strict compliance with food safety, sanitation, and hygiene standards (HACCP and local regulations).
    • Monitor inventory levels, manage raw materials efficiently, and control food cost and wastage.
    • Oversee proper handling and preventive maintenance of bakery equipment.
    • Collaborate with Executive Chef and Operations Team for menu enhancements and product innovation.
    • Implement and maintain bakery SOPs aligned with restaurant operational standards.

    Qualifications:

    Education

    • Graduate of Culinary Arts, Hotel & Restaurant Management, or related field.
    • Additional certifications in Food Safety, HACCP, or related disciplines are an advantage.

    Experience

    • Proven experience as a Head Bread Baker, with strong expertise in artisan and Italian-style bread production (e.g., focaccia, ciabatta, sourdough).
    • Demonstrated ability to manage, lead, and train a bakery team in a high-volume restaurant setting.
    • In-depth knowledge of food safety standards, sanitation regulations, and kitchen best practices.
    • Strong background in menu development, recipe standardization, kitchen operations, and staff training.
    • Experience in developing and implementing kitchen SOPs, production systems, and quality control procedures.
    • Ability to maintain consistency in product quality, taste, and presentation aligned with brand standards.
    • Excellent organizational, leadership, and time-management skills.
