OB OVERVIEW & KEY DUTIES • Supervises the operations of the Stewarding Sub - Section. • Check the performances of all crew in the Stewarding Sub - Section. • Controls the purchase requests and supplies efficiently. • Plan out the annual budget proposal to F&B Director and follow-up on ordering and delivery after approval. • Organizes monthly breakage reports to F&B Director’s office. • Arrange crew duty rosters. • Ensure a good standard of cleanliness in all kitchen areas. • Organize a checklist for opening and closing of various stewarding areas. • Attend to operating equipment inventory. • Supply outlets with necessary operating equipment. • Arrange pest control schedules. • Maintain all operating equipment, washing machinery and all equipment is in good condition. • Conduct training to all crew on the correct mixture of detergents and the right way to operating dishwashing machines and other relevant equipment. • Ensure all crew is familiar with safety procedures for chemical handling. • Maintain a daily logbook. CAREER PROFILE PROFESSIONAL EXPERIENCES • Conduct daily briefings with all crew. • Frequently inspect Back-of House areas in order to ensure that sanitation standards established by Dream Cruises are adhered. • Establish all kinds of operating equipment and cleaning procedures. • Arrange cleaning for crew mess and maintain control of it. • Bi-weekly inspections of all stewarding areas. • Ensure all crew is neat and well-groomed and they do not deviate from their prescribed uniform. • To perform other responsibilities as assigned by the superior, but not limited to the above.
